Stolo Vineyard in Cambria is the latest ripening Syrah site in the US, and part of our winery since 2017. In 2024, the one acre Alban clone block was picked November 7th. It is dry-farmed with organic practices.
After we destemmed the fruit into bins, the first two nights were near freezing outdoors where I ferment, and an unprecedented eight day cold soak occurred, intensifying color and body before natural fermentation began. Fermentation went dry the Friday before Thanksgiving.
I gravity drained one fermentation bin into my two oldest French oak barrels, and racked and returned the wine once after native malolactic fermentation on the new moon in May.
Alcohol 12%. Unfined/unfiltered, with minimal sulfites. A mere 47 cases bottled on August 21st, 2025.
